This gallery shows some examples of the cakes I've created using various decorating techniques.

  

Cirque du Soleil and Big Apple Circus

These are all full sheet cakes (15" x 22") which I made for the premiere parties for
Cirque du Soleil and Big Apple Circus. I made the images in multiple pieces using
royal icing. After drying, the pieces were assembled to create a 3-D effect.
The designs were then placed on cakes iced in buttercream.

I made this "Dralion" cake for show's premiere party on October 11, 2000 at Tyson's Corner, Virginia.

Here's the first cake I made for the Cirque.

Cocoa Painting Portraits

These cakes were topped with pastillage plaques made from sugar with portraits rendered in a technique known as cocoa painting.
The "paint" is made by mixing in varying amounts of cocoa into melted cocoa butter to create different shades of brown.

This cake was created for a Presidents Day
party at Mount Vernon.

I made this cake for the National Capital Area Cake Show in March 2009

Henderson Elementary School's 2012 "School of Excellence" celebration event.

This cake was for Henderson Elementary School's Teacher Appreciation Luncheon, May 2010. The ruler, apple, chalk, eraser and husky "magnet" were created in royal icing with food color paint and luster dust embellishments.

This cake was created in the British "Nirvana" royal icing style for the 2003 "Baker's Dozen" calendar of cakes.
